Menu Planning & Coeliac Disease

hi
I'm having trouble in this section.


Devise a 2 week menu (Monday to Friday), suitable for children aged 3-5 years that caters for morning tea, lunch, afternoon tea, late afternoon snack and drinks. Your menu needs to be suitable for use in a child care setting and include the following:
50-75% of the recommended number of serves for each food group each day A variety of ingredients and textures
A range of foods from different cultures
One red meat-free day per week
Vegetarian options for each meal period
No repetition of menu items (excluding drinks)


You are required to:
a) Present your menu in an attractive, easy-to read format and submit it.
b) Choose an item from your menu that contains an ingredient that may trigger a reaction from a child who has coeliac disease. Submit the recipe for that menu item.
c) Alter the recipe for the menu item so that it would be suitable for a child with coeliac disease.
d) Pick one lunch offering and explain how this meets the Australian Dietary Guidelines.

a) is done

b and c i don t understande if i have to do the menu for a coeliac child or do a recipe for the ingredient. cam u plez help me

b) Coeliac Diseases - People with coeliac disease (pronounced ‘seel-ee-ak’ and spelt celiac in some countries) the immune system reacts abnormally to gluten (a protein found in wheat, rye, barley and oats), causing small bowel damage.

Ref: Coeliac

So, from your menu, you need to choose 1 food item that contains either wheat, rye, barley or oats.

c) When you pick the food item such as oatmeal muffins for example you need to change it so the child with coeliac can also have it.

Are you referring to the following:

b) Choose an item from your menu that contains an ingredient that may trigger a reaction from a child who has coeliac disease. Submit the recipe for that menu item.

c) Alter the recipe for the menu item so that it would be suitable for a child with coeliac disease.

Ok so you need to find a food item (such as muffins) you will include on a menu that is not suitable for a child with coeliac disease.

Then using thay food item (muffins) you have to alter/change the receipe so a child with coeliac can eat it as well.

You can find plenty of recipes online.
