can someone let me know what open-ended question means?

open ended question means that does not have a definite answer.....normally questions that start with what, why etc.
but for example what color is apple? is not a open ended question because it has a definite answer.so question that allow any one to think and use the imagination and answer are open ended.

That is right and with parents your objective is to get as much feedback from them as possible.So an open ended question for a parent is in order to encourage their involvement, thoughts and suggestions. This is imperative when observing a focus child for assignments or doing portfolios, ask them to read through and express their thoughts to improve your targets or goals for their child's development and learning.
