Observations for non english speaking children

Hi,
I am wondering how to do observations for non-English speaking children (age 3-5). I don't understand what they are saying, they have very little or no English as well.
So far I am just watching what they are doing with their friends and the ideas behind it based on observing them. But that's all, I can't have any meaningful conversations without having a shrug.
I am a bit loss as to how to program for them other than based on EYLF milestone development or make a generalisation of interests based on what I saw.
Any more ideas?
