Wholemeal Cheese Scones

A savoury scone is a perfect wholesome snack for morning, afternoon and late snack. 

Ingredients

  • 4 cups Self raising flour
  • 4 cups Wholemeal self-raising flour
  • 4 tbs Margarine
  • 2 cups Reduced fat cheese, grated
  • 2 cups Reduced fat milk
  • 4 Eggs

Method

  1. Beat eggs and milk together.
  2. Rub margarine into combined flour then and grated cheese.
  3. Stir the combined egg and milk into the flour to make a soft dough. Lightly knead the dough on a lightly floured surface.
  4. Pat dough out to approx. 2cm thick. Cut with a sharp, lightly floured cutter or knife into at least 40 scones.
  5. Place onto a greased tray and bake in a hot oven (200-220C) for 10-15 minutes.

Hints and Tips

  • Two cups of sultans could be added (before adding the milk and eggs).
  • If the dough is too sticky to knead, divide the mixture between two greased loaf tins and bake in a moderate oven (180c) for 30-40 minutes or until cooked. The dough could also be cooked as a damper.
  • Instead of using a scone cutter, pat dough out to approx. 2cm thick and, using a sharp knife, cut into square (or rectangle) Scones.
  • Scones freeze well.
